The Secret of No Churn Ice Cream

I have many fond memories of the hours spent making mom’s homemade vanilla in an old fashioned ice cream machine. It’s so good, but also so time consuming.

I knew there had to be an easier way – one that didn’t include hours of churning and salt and ice!

Luckily, I discovered the secrets to making this creamy cold concoction without churning years ago… and it’s made homemade ice cream simpler than ever before.

Ingredients and Substitutions

All of the recipes in this collection are based around the following two items, with flavorings, add-ins and toppings to customize each.

  • Heavy Whipping Cream – Also known as heavy cream, it gives the ice cream a creamy texture and body.
  • Sweetened Condensed Milk – Thicker than milk because all the water is removed. It acts as the sweetener for no churn ice cream.

Tips

  • Make sure you use really cold heavy whipping cream. Store it at the back of your refrigerator for best results.
  • Put your mixing bowl in the fridge or freezer for a little bit before, as well. The colder your bowl and ingredients are, the more air will be trapped in your ice cream for a lighter, creamier finish.
  • Your freezer’s coldest area is probably in the back. Store your ice cream there for a quicker freeze and to store.

20 No Churn Ice Cream Recipes

  • The basic principle behind all of these recipes is the same! We combine sweetened condensed milk with thick, rich heavy whipping cream.
  • YES… that’s it! Many of the recipes will also include a little vanilla extract, but it’s totally personal preference. From there, you can see that each recipe is individually unique with delicious additions.
  • This condensed milk mixture will serve as the basis of every recipe combination you’d like to create. From this incredibly simple ice cream base, the flavors and additions are completely up to you!

FAQs

Why won't my homemade ice cream thicken up? ›

How do you make soft and fluffy ice cream? ›

Sugar, corn syrup or honey, as well as gelatin and commercial stabilizers, can all keep your ice cream at a softer consistency. Why do you put condensed milk in ice cream? ›

Sweetened condensed milk

Why does my homemade ice cream freeze so hard? ›

the amount and/or type of sugar used in the recipe. From what I've experienced and also understand from others involved in ice cream making, concentrated sugar depresses the freezing point of ice cream, so too little an amount of sugar in the recipe makes it too hard and too much makes it too soft.

What ingredient makes ice cream scoopable? ›

There are two things that play part in making an ice cream perfectly scoop-able. It's the sugar content and the fat content. A higher fat content will cause an ice cream to be more scoop-able since fat freezes at a different temperature than water.

"You have to churn it very slowly. The faster you go, the more air is whipped into the ice cream." In the ice cream business, that extra air pumped in during churning is called overrun, and the more overrun you bring to an ice cream, the lighter and airier it'll feel on the tongue.

Why is my ice cream still liquid in ice cream maker? ›

It's as simple as this: If the freezer bowl that goes with your ice cream maker isn't cold (like, really cold), your ice cream is never going to freeze. → Follow this tip: In order for the machine to freeze the ice cream as it churns, it needs to be cold — like, totally and completely, rock-hard, ice cold.

Why is my ice cream soft but everything else is frozen? ›

Temperature Too Warm

If the freezer is freezing but your ice cream seems to soft, check the temperature setting is correct. The recommended setting for a freezer is 0°F (-18°C). The freezer should be operated in an environment between 55°F (13°C) and 110°F (43°C).

How long does it take for ice cream to thicken? ›

Churn the ice cream base: Transfer the ice cream base to the bowl of your ice cream machine. Churn until the base has thickened to a consistency somewhere between a very thick milkshake and soft-serve ice cream. In most ice cream makers, this takes about 20 minutes — check the instructions for your particular machine.

How do you know if ice cream is over churned? ›
